She said she's actually 5'8" (maybe even 5'7", can't remember) in a video she did with Josie Canseco

That might be true but I find that hard to wrap my head around. I have seen her towering over other girls I thought were pretty tall themselves.

e.g. Carmella Rose. But perhaps I am overestimating how tall all of these models are.

Rose is officially 5'8" but I have seen pictures where Scarlett looks clearly taller. But perhaps all of these "official" heights are BS.

I agree with you, 3 years ago I think... I remember to read the bio on one official model page where she worked and she was listed as 174cm....so lets see the agency add you 1cm by default (to every model), so yes she's probably 173/174cm exactly...no more_no less.
