Mozzarella  sticks are fairly easy to make actually.  For mine which I'm fairly sure will be standard  and like Chrissy's minus the cajun heat -

1/4 cup Flour
1 cup Italian style Breadcrumbs (or make your own... personally I'd do cajun seasoning)
2 Medium eggs
1 Tablespoon whole milk
1 pound mozzarella cheese chilled for 4 hours
1 cup veggy or canola oil

----

Whisk eggs and milk together.
Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
Dip in egg and crumbs again.
Heat oil in skillet and cook sticks for about a minute on each side, or until golden and before cheese starts to leak.
Drain on paper towels.

And finally do a light dusting of Adobo seasoning over the sticks
