The difference to me is the way you feel after you eat, I feel great after Italian food, not American Italian food.

 

Those are Northern Italian things.

 

I don't eat any pastas with white and/or pesto sauces.

We don’t really have a Northern or Southern way to do a pasta dish, there are some changes but minimal. We have typical Northern or Southern dishes tho, but yeah, I totally get what you mean regarding the way you feel after you eat

Yes, but the North has different blended inspirations for their dishes; cream, butter, and milk.

i live in northern NJ with a huge Italian-american population.  I have about half a dozen Italian-stocked grocers, a dozen pizza places and a couple Italian restaurants 15 minutes or less from me.  Theirs may be a little more authentic than in cali. But probably not quite?

 

What do you think of the Olive Garden??  !!

And oh really? Even if I don’t know the area, I am almost sure that even if they have italian origins, their dishes are not the same as in Italy because, like I said, here you lack of some important ingredients and you guys mix pasta with meat, which is not something we do, like meatball pasta or chicken on alfredo pasta, or even salad.

Olive garden is a running gag with Italian-Americans as being fake/corporate Italian food.  Another corporate chain, PF Chang, is also fake Chinese food.

 

It's kind of funny that you say that there are a lot of missing ingredients - I never knew that and that means they were full of it..:D  I don't know anything about Italian cooking and ingredients so maybe you are completely right.  I just see a lot of Italian things in the grocers and so forth.  Surely, however, Italian delis are filled with americanized italian food then.

Olive Garden sucks as do all other chain restaurants that Boomers like.

 

They don't even good their food, it's either unfrozen or taken out of the package and put on the conveyor belt.

I noticed that in grocery stores there are a lot of imported italian brands, or italian brands that I've never heard of  I like to shop at Trader Joe's (if you know of it) because they have really good italian stuff, like many kinds of hams and cheese and sauces to use for pasta. My favourite so far is Eataly because they sell all the things that I used to eat back in Italy, except for some things, but it's not a big deal. What they sell there is super delicious. It's just that (at least here), Italian brands and food are SO expensive, like I saw Italian coffee sold for like 15 bucks when in Italy you can get it at like 5 Euros at the most  I'm like wtf every time  

For example, why is it so impossible to find panna in the US?  and I'm not talking about whipped cream, I'm talking about a white sauce made out of milk  We use panna in almost everything.
