I inwardly cry when my father in law wants a two inch thick ribeye cooked well done. That’s a huge crime! And he was a meat cutter in a grocery store for almost twenty years!

fatty cuts medium rare

It was incredible!!
For the beef only salt. If the meat is good (and this was REALLY good) it needs nothing more.
For the pork I used salt, pepper, oregano, cumin and merkén.

Yes they are!

Agreed! A prime cut of meat literally only needs its own fat and juices to carry it all the way. Salt and pepper should usually be the only ingredients needed to compliment its flavor. And ah okay, had to look up merken but sounds like a perfect spice for pork!

But here's more grilled stuff
This was back in February I think. Mostly short ribs and I don't remember what the other cut was. Grille by me of course
These I grilled for my mom's birthday back in December. All rib-eye. Also incredible
And this was the first meal I had in New York last week. This was a strip loin (or was it a rib-eye? It was probably a rib-eye now that I remember). And it was so good
It came with fries and a cornbread.
