I know you said you wanted some of my habanero chilli dogs, so I assume you're okay with spice and you also say you love to cook. That said, how do you feel about cayanne pepper? It seems some people swear by it, but I'm not really getting the craze yet
. On one hand, I don't taste even a hint of heat and on the other hand I can't taste the flavor either. That's not to say I'm looking for heat even though I'm largely resistant to it (though I'll leave the ghost chillis alone for now), I'm really just looking for flavor. Could I be using the wrong kind or does it have no actual flavor value and only serve as giving heat to things? To me crushed red pepper and chilli powder on the other hand actually tastes good.

Rarely, for an Argentino anyway, I adore spice. I put it to my growing up in the Middle East and the British half of me's national penchant for curry. During my 18 months in Albuquerque I obviously gained a fondness for Mexican and Tex/Mex cuisine, recipes of which I then utilised in my latter kitchen career. I'm with you, the fresh 'mashing' of peppers and herbs is preferable - and brings a piquancy to sauces and marinades that the dullness of some previously ground spices precludes. But to just crush a cayenne pepper yourself is simple enough and is delicious. It's kind of the same with paprika (even more so actually, as that's smoked and I haven't quite perfected/bothered to learn that) - it won't be quite the usual taste of said spice that you're used to, but it has a zing that is delicious.
I suppose it's easy enough to just add some 'heat' to a dish - but I tend to eschew those spice jars as they are already long "dead", so to speak.
Thus concludes my first culinary masterclass!!! ![]()

At least to me there's something about knowing that this place is the only one or at least one of few that makes it a certain way and isn't run by a bunch of guys who will never set foot in there is interresting to me. Of course the consistency of a regular chain can be convenient but the uniqueness factor really appeals to me.

You mean specifically diners? As a concept, they don't really exist (in as much as a regular feature of a town, of course there are US theme 'diners' around) in Argentina or the UK. Rather we have cafes, which are very different. If you're ever in Albuquerque though I'd heartily recommend The Frontier. It's an institution. I still dream about their breakfast burritos and cinnamon buns...Yeah, I guess crushing it myself is the answer.
